  1. Place the dates, ground almond, cacao powder, vanilla and peppermint extract in a blender. Blend until well combined.
  2. If the mixture is too thick, add 1-2 tablespoons of water and blend again.
  3. Scoop out a spoon of the mixture and roll into a ball. Place on a plate and continue rolling into balls until all the mixture has been used up.
  4. Roll the balls in desiccated coconut, if desired.
  5. Pop the plate into the fridge for 30 minutes...And ENJOY!
