I give you...Super Fudgy Brownie...the best thing I've ever made!
Whilst making a chocolatey valentine treat, I stumbled upon the BEST baked treat I've ever made...Super Fudgy Brownie.
This delicious, naturally sweetened, nutrient-rich brownie is so healthy it's hard to believe it's healthy.
The preparation time is a little misleading...most of the time is waiting for the sweet potato to roast. So don't be put off by the prep time. Once the potato is ready to go, it literally takes 10 minutes to pull these gorgeous bites together.
And believe us...these super fudgy brownies are totally worth the wait!
I used my food processor to make these brownies. But if you don't have a food processor...don't worry. These can be made with just a bowl, spoon and a little vigorous stirring.
I used the food processor to make an oat flour. You can purchase oat float from the supermarket but it's so easy to do and is so much cheaper to make yourself. Pop regular rolled-oats into a food processor or blender and blitz. That's literally it. It takes approximately 1 minute to make. The flour probably won't be as powdery or as fine as a store-bought oat flour...this has zero impact on taste.

If you're sharing these brownies with you little sweethearts, cut them into smaller squares. Store in the fridge for up to 5 days or in your freezer (if you manage to save any 🤣) for up to 3 months. This recipe is SO versatile - change out pecans for walnuts, chia seed for flaxseed, peanut butter for almond or cashew.
These brownies are utterly delicious on their own. I know because I taste-tested several and I don't even really like brownies. But these would be next level with a scoop of ice-cream or Greek yogurt and berries.
